As the new year rolls one of my goals is to try some different things in cheesemaking.  This is my first creamcheese.  Yeah, it doesn't look very creamy.  I realized that I hadn't read the recipe very well when I was already launched into it.  The dark stuff is dried cherries - this had a little sugar added and even though it turned out lumpy, it was really tasty.  This was a small part of the whole recipe.  I pulled 1/3 out and made this, then lightly salted the other 2/3, divided it in half and added herbs to one half.  So I had 1/3 plain, 1/3 sweet with cherries and 1/3 herbed.   Lumpy but yummy!
I've also made a Montasio, which is kinda like a parmesian.  It will age for quite some time before we can taste it.
